Ingredients
FROSTED COOKIE MUMMY BROWNIES
- 2 Mission Frosted Cookies
- ¾ cup almond flour
- ⅓ cup unsweetened special dark cocoa powder
- A pinch of sea salt
- ¼ cup unsweetened dark chocolate chips
- ½ cup + 2 tablespoons of butter
- ½ cup no-calorie sweetener
- 3 eggs
- 2 teaspoons vanilla extract
- ½ cup sugar-free white chocolate chips
- 1 teaspoon coconut oil
- 32 candy eye balls
Method
- Preheat the oven to 350 F and prepare an 8×8 inch pan with parchment paper.
- Place the cookies in a food processor or nutribullet and blend until fine crumbs form.
- Transfer to a bowl and combine with almond flour, cocoa powder and salt.
- In a microwave-safe bowl, add the chocolate chips, butter, and sweetener and microwave on high for 20 seconds.
- Stir and microwave again for 20 seconds. Stir gently. Let cool slightly before adding the eggs and vanilla extract.
- Add the dry ingredients and stir until a dough forms.
- Transfer to the pan and spread the dough into an even layer. Bake for 20-25 minutes. Let cool completely before cutting into 16 bars.
- Add the white chocolate chips and coconut oil to a glass bowl over a small pot of boiling water, stirring occasionally until melted.
- Transfer to a resealable plastic bag and cut the corner to make a piping bag and zigzag through the brownies, finishing with candy eyes and chill until the chocolate is solid.
